Nachos from the territories

Matt decided to make some salsa last night using onions, tomatoes, hot sauce, jalapeño, and oranges from the backyard. We decided to use his little experiment on our dinner today.
We fried some potatoes and mixed em with black beans and plopped it on top of some homemade baked tortilla chips.
Who says you hafta be hungry when you're broke? Just be creative!

So we started this blog to document our adventures together. Its primarily for us, but we welcome anyone who wants to pay this site a visit.

we are:
Matthew: A twenty-three year old vegan human. He is an ecology student who currently works at a school for teens with developmental disabilities as a 1:1 instructor. He likes to read and is interested in civil rights issues pertaining to all life on this Earth.
Tabitha: A twenty-three year old English major. She eventually wants to be a teacher. She likes to read science fiction and write stuff without showing anybody.
